Weekends will always be more crowded, with people out and about for their days off. If you want a quieter experience, visit during weekdays, preferably in the morning.
Peak season vs low season

Peak tourist season is between December and February, when the weather is sunny and pleasant. You'll find a lot more tourists visiting Australia this time. Shoulder seasons from March to May and September to November are a good option for a less crowded experience, with pleasant enough weather.
